We wandered around Midleton Shops then headed back to the Distillery for the Jamesons Experience Tour. The Old Midleton Distillery operated on this site for 150 years from 1825. The process was pretty much the same everywhere: first they take the barley, soak it in water, spread it out on the malthouse floor. The barley begins to germinate and sprout roots and is then called malt. It is then dried in closed kilns (bottom right) to halt the germination process and ensure an unsmoked taste. One of the differences to Scotch Whisky (apart from the spelling without an 'e') is no smoky peat taste.
